Recipe of the week: Slimming World One Syn Oat Pancakes

I have tried many different pancake/waffle recipes since starting slimming world. I have finally found my favourite!

When I tried this recipe (originally found on www.slimmingeats.com and then adapted to create my own version) I realised that is had to be a recipe of the week. Not only is it completely delicious, and very easy to make, it is also slimming world friendly so fabulous if you are trying to re-find yourself in amongst the treatment-related weight gain.

Plus, if you are still in the midst of treatment, I think this would also be ideal for those days when you are looking for something stodgy and satisfying whilst knowing you are still keeping things pretty healthy and nutritious. Add some lovely fresh berries (which are great at cutting right through the weird furry, funny tasting chemo mouth you can get) and it is a breakfast of champions!

You can either use this recipe for pancakes or (if you have one) in a waffle maker to make waffles.

Recipe

Ingredients (makes one waffle)

  • 40g Oats (Healthy Extra B if following slimming world plan)
  • 3/4 tsp of baking powder (SW: less than 1/2 syn so not counted)
  • 60ml fat free natural yoghurt
  • 2tsp of agave nectar (SW: 1syn)
  • 1/4 tsp vanilla extract
  • 1 large egg
  • Spray Oil

Method

If you are using a waffle iron, pre-heat the iron to a low heat

Blitz the oats in a processor or blender until they have the same consistency as flour

Add all other ingredients and mix well to combine. Be quite vigorous with your mixing to get a bit of air in to the mixture.

Waffles: Spray your waffle iron with spray oil. If you are using a waffle iron, pour in the mixture evenly, close and cook until golden (there should be no need to turn as the mixture will rise up

American pancakes: Spray your frying pan with spray oil and heat. Once the pan is really hot, add the mixture with a ladle to create blobs about 10cm diameter. Cook for a few minutes until golden brown, flipping halfway through to ensure they are evenly cooked on both sides.

Smother in fresh berries, and possibly a bit more agave nectar (will need to be synned accordingly if you are on SW) and enjoy with a nice big mug of tea/coffee!
